Fresh fruit is just one of the many perks that come with summer—think juicy strawberries, blueberries, raspberries and more. On a recent trip to our local farmer’s market, we noticed that delicious red cherries are making a comeback and that got us thinking about our favourite cherry pie recipe.
Made with Organic Earl Grey tea, our recipe is for a rustic cherry pie, which means you don’t need a pie plate or any crust shaping skills. Plus, the bergamot from the Earl Grey adds a lovely citrusy note that (dare we say it) rivals grandma’s cherry pie recipe. Next time you’re at the market, grab an extra bag of those irresistible cherries and get ready to taste the best cherry pie of your life.
RUSTIC EARL GREY AND CHERRY PIE

Cherry Pie
Ingredients
Pie Crust
- 1 ⅓ cups flour
- 4 tbsp sugar
- ½ cups cold butter, cut into cubes
- ¼ tsp salt
- 4-6 tbsp cold water
Filling
- 3 cups (½ kg) cherries, halved and pitted
- ⅓ cup + ½ tsp sugar
- ¼ cup of flour
- Vanilla (seeds of half a bean) or vanilla extract (1 tsp)
- Pinch of salt
- 2 tsp semolina
- 1 egg (egg wash)
Directions
Step 1 | |
In a large bowl, mix flour, sugar and salt. Next, add cold butter and use your fingers to mix everything together. | |

Slowly add water until you can form a ball. Wrap dough in plastic wrap and then place in the fridge. | |

Preheat oven to 375 F | |
Step 4 | |
Meanwhile, steep 3 Perfect Spoons of Earl Grey in ½ cup of water for 5 min and then strain into a measuring cup. | |

In a medium bowl, add pitted and halved cherries, ¼ cup of steeped tea, ⅓ cup of sugar, ¼ cup of flour, vanilla and a pinch of salt. Mix until well coated. | |
Step 6 | |
Remove dough from fridge and roll into a 14” circle. Next, pour 2 tsp of semolina and ½ tsp of sugar into the centre of the pie dough, leaving a 3” border. | |
Step 7 | |
Assemble the cherries on top of the semolina, then fold up and pleat the dough over the cherries to create a border. | |
Step 8 | |
Brush pastry with an egg wash. | |
Step 9 | |
Bake for 45-60 min or until the crust is cooked and the filling is bubbling. | |

Serve warm or at room temp. |
