Pickled Apples (featuring Spiced Apple Tea)

These sweet and tangy Spiced Apple-infused pickled apples are great in salads, as a garnish or (our personal favourite) on top of pulled pork tacos!

Ingredients

  • 6 heaping Perfect Spoonfuls of Spiced Apple tea
  • 2 cups water
  • 3-5 apples (granny smith, gala or mcintosh work well), sliced into thin wedges
  • 1 orange, sliced into rounds
  • 1 lemon, sliced into rounds
  • 3 tbsp fresh ginger, chopped
  • 2 cups white sugar
  • 2 cups white vinegar
  • fresh mint sprigs
  • 3 canning jars, 16oz

Directions

Step 1
Steep tea for 7 minutes then strain into saucepan.
Step 2
Add sugar and vinegar and bring to a low boil.
Step 3
In the meantime, prepare the fruit and ginger. Divide the fruit equally into the canning jars and add 1 tbs ginger and a sprig of mint to each.
Step 4
Pour in hot pickling liquid and seal lids.
Step 5
Let cool to room temperature and then store in the fridge for 2-7 days before serving.
