Nutty By Nature Muffins
The best thing about breakfast food is that it can be enjoyed at any time of the day. And muffins are no exception, especially when they taste this good. Infused with Nutty By Nature, these light and fluffy muffins are bursting with goodness. Try them on their own or topped with apricot jam.
Ingredients
- 1 Perfect Spoonful of Nutty by Nature tea
- 1 cup water
- 2 cups flour
- ½ cup white sugar
- ¼ cup brown sugar
- 1 tsp baking soda
- ½ tsp salt
- ¼ cup unsalted butter, melted
- ¼ cup vegetable oil
- 2 tbs heavy cream
- 1 tbs white vinegar
- 1 egg
- 1 can apricots, drained well
- Slivered almonds

Directions

| Preheat oven to 400ºF. | |

| Steep tea for 6 minutes then strain into a medium bowl. | |
| Step 3 | |
| Whisk in butter, oil, vinegar, cream and egg in that order. | |

| In a separate large bowl, mix together flour, sugar, baking soda and salt. | |
| Step 5 | |
| Blend the wet ingredients into the dry until they just come together. | |
| Step 6 | |
| Fold in the apricots. | |
| Step 7 | |
| Line a muffin tray with paper baking cups and fill each ¾ full with batter. | |
| Step 8 | |
| Top each with a few slivered almonds and bake for 18-20 minutes, or until a toothpick inserted comes out clean. | |
