Just Beet It Salad with Tea Infused Dressing

Ingredients
- 2 beets, thinly sliced (For the salad)
- Goat or feta cheese
- Caramelized pepitas or walnuts (optional)
- 2 Perfect Spoonfuls of Just Beet It tea (For the dressing)
- ½ cup hot water
- 2 tbsp balsamic vinegar
- 4 tbsp brewed tea
- 1 tbsp thinly chopped shallots
- 1/2 tsp dark honey
- 6 tbsp olive oil
- Salt and pepper
Directions
Step 1 | |
Brew tea in hot water for 5 minutes, then strain into a measuring cup and discard tea leaves. Let tea cool to room temperature. | |

In a small bowl, whisk together 4 tbsp (1 ½ oz) of brewed tea, balsamic vinegar, chopped shallots, dark honey and olive oil. Then season with salt and pepper to taste. | |
Step 3 | |
In a salad bowl, combine baby spinach, beets and goat cheese. Top with caramelized pepitas, cheese and as much salad dressing as you like. |
