S’mores Chai Tea Infused Blondies

Ingredients

  • ¼ cup butter, melted (for the crust)
  • 150 g graham crackers
  • ¼ tsp salt
  • 6 Perfect Spoonfuls of S’mores Chai tea (for the blondies)
  • ½ cup near-boiling water
  • ½ cup butter, melted
  • ¾ cup sugar
  • 2 eggs
  • ½ tsp salt
  • 1 cup flour
  • ½ cup semisweet chopped chocolate or chocolate chips
  • 8 marshmallows cut in half (or 1 cup of mini marshmallows)

Directions

Step 1
Preheat oven to 325°F.
Step 2
Brew tea in ½ cup of near-boiling water for 5 min, then strain into measuring cup and set aside.
Step 3
Line a 8”x8”x2” baking pan with foil.
Step 4
Pulse graham crackers in a food processor (or mash them with a rolling pin), then add ¼ cup melted butter and salt and mix well. Transfer mixture into a lined baking pan, pressing firmly into the pan.
Step 5
Bake for 10 minutes. Remove and let cool while you prepare the rest.
Step 6
In a bowl, combine sugar, salt, ½ cup of melted butter and ¼ cup of brewed tea and mix until ingredients are well incorporated.
Step 7
Add eggs one at a time, mixing well between additions. Add flour and stir until combined. (Don’t overmix!)
Step 8
Pour batter over graham crust. Sprinkle chopped chocolate and marshmallows on top. Bake for 25-30 minutes, then remove from the oven and let cool for 15 minutes before serving. Makes 16 squares.
