Grain Bowl with Zestfully Green Dressing
Ingredients
- 2 Perfect Spoonfuls of Zestfully Green tea
- ⅓ cup hot water
- 3 tbsp olive oil
- ½ tsp mayonnaise
- ½ tsp honey
- ¼ tsp cumin
- ¼ tsp salt
- ¼ tsp orange zest
- ½ tsp Greek yogurt
- 2 cups cooked brown rice or other grain
- assorted vegetables – whatever you have on hand!
Note
A few ideas:
- Radishes + carrots + mushrooms + sprouts + golden tomatoes
- Cucumbers + cherry tomatoes + feta + red onions + basil
- Roasted squash + goat cheese + spinach + sun dried tomatoes
- Kale + walnuts + dried cranberries + apple
Directions
Step 1 | |
Steep tea in ⅓ cup of hot water for 3 minutes, strain into a small bowl and chill for 10 minutes in the freezer. | |
Step 2 | |
Add 2 tbsp brewed tea to lidded jar or medium bowl and discard the rest. Add olive oil, mayonnaise, honey, cumin, salt, orange zest and Greek yogurt. Shake or whisk until fully combined. | |
Step 3 | |
Divide chilled rice into two bowls with assorted veggies. Serve topped with dressing. | |

Pro Tip: Refrigerate dressing overnight for an even better flavour! |
