The Spice is Right Muffins


  • 1 Perfect Spoonful (2.5 tsp) of The Spice is Right tea
  • 1 cup water
  • 2 cups flour
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup unsalted butter, melted
  • ¼ cup vegetable oil
  • 2 tbs heavy cream
  • 1 tbs white vinegar
  • 1 egg
  • 1 tbs orange zest
  • Ground cinnamon


Step 1
Preheat oven to 400F.
Step 2
Steep tea for 6 minutes, then strain into a medium bowl.
Step 3
Whisk in butter, oil, vinegar, cream and egg in that order.
Step 4
In a separate large bowl, mix together flour, sugar, baking soda, salt and orange zest.
Step 5
Blend the wet ingredients into the dry until they just come together.
Step 6
Line a muffin tray with paper baking cups and fill each ¾ full with batter.
Step 7
Top each muffin with a light dusting of cinnamon powder and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
