Hot Chocolate Infused Marshmallows

Nothing tops off a mug of hot chocolate like a big fluffy marshmallow. But we wanted to take it to the next level…marshmallows infused with Hot Chocolate tea! And after many nights of taste testing, our tea experts came up with the perfect recipe. Hot chocolate will never be the same again.

Ingredients

  • 2 Perfect Spoonfuls of Hot Chocolate tea
  • 1 cup of water, divided into halves
  • 1 tsp half & half, heavy cream or non-dairy alternative
  • 3 envelopes of unflavoured gelatin
  • 1 ½ cups sugar
  • 1 cup light corn syrup
  • Pinch of salt
  • 1 tsp vanilla
  • Powdered sugar
  • Cocoa powder
  • Non-stick spray

Directions

Step 1
Steep tea in a 1/2 cup of hot water for 5 minutes and strain into a stand mixer bowl, fitted with the whisk attachment. Add half & half or cream alternative and gelatin, and mix until dissolved.
Step 2
In a medium saucepan add remaining ½ cup of water, sugar, corn syrup and salt. Set to medium-high heat and bring to a boil, stirring constantly. Let boil for 3-4 minutes, being careful not to let it boil over.
Step 3
Add heated sugar mixture in a slow stream to the stand mixer bowl, set to low speed. Add vanilla and increase speed to high, whipping for about 15-20 minutes. The mixture will thicken and cool.
Step 4
Spray an 8x8 or other shallow baking dish with non-stick spray and coat with powdered sugar. Pour in marshmallow mixture and let sit for at least 5 hours.
Step 5
Using a greased pizza roller or knife, cut into 1x1 squares.
Step 6
Add 4 tbs powdered sugar and 1 tsp cocoa powder into a gallon sized bag. Place in marshmallows and shake to coat.
Step 7
Add 4 tbs powdered sugar and 1 tsp cocoa powder into a gallon sized bag. Place in marshmallows and shake to coat.

    Awesome recipe! I might give this a try as part of a Christmas gift – do you think this would work with mint tea instead of Hot Chocolate?

    FYI – steps 4 and 5 are the same 🙂
