Green Smoothie with Coco Mango Chai tea

There are winter mornings when the sky is so low you feel as though you could reach out and touch it. It’s on mornings like this, when the sun is nowhere to be seen, that you need to add some brightness into your day.  

In short, if you can’t go to the tropics let this recipe bring the tropics to you. 

Inspired by traditional Mexican Jugo Verde, which is touted for its cleansing properties, this green smoothie is full of good-for-your ingredients (celery! parsley! nopal!) that can be enjoyed with an epic Mexican breakfast (read: huge) or on its own. Either way, this smoothie will leave you feeling both refreshed and invigorated. We added fresh nopal (aka cactus leaf) for a more authentic flavor but it tastes just as good without. If you’re interested in trying it with nopal, check out your local specialty food store.

Ingredients

  • 2 Perfect Spoons of Coco Mango Chai tea
  • 1 cup water
  • ¾ cup freshly cut pineapple
  • 2-3 tbsp parsley, roughly chopped
  • ½ celery stick, veins removed
  • ¼ cup cactus leaf cut in squares (optional)

Directions

Step 1
In a steeper add 2 Perfect Spoons of Coco Mango Chai tea and 1 cup 95°C / 200°F water and let steep for 5 minutes.
Step 2
Strain into a cup and let cool to room temperature.
Step 3
In a blender, add pineapple, parsley, celery, cactus leaf and ¾ cup of cooled tea. Blend until smooth, serve in a glass and enjoy!
